2-Ingredient Chocolate Pudding from Elana’s Pantry

I’ve heard there are people out there who don’t care so much for chocolate. Who don’t have a sweet tooth, who have no problem avoiding dessert.

Yeah right.

I don’t care how many months I go without sugar, gluten, or dairy — plop me down in front of a homemade carrot cake with cream cheese frosting…

Aaaaand it’s over. The carrot cake wins every time.

If you’re one of these mythical, sweet-hating mutants, this post is not for you.

But if you’re like me and most other well-meaning healthy eaters out there, a list like this is going to save you from many cake-related meltdowns in the future.

Our favorite (right now) healthy dessert recipes

1. Two-Ingredient Chocolate Pudding. This recipe (pictured above) is seriously simple and seriously good. Coconut milk + chocolate. Boom. From Elana’s Pantry.

2. Cranberry Energy Bars. Here you just kind of mush together cranberries, dates, tahini and coconut and let it chill. From @yoga_nora on Instagram.

3. Dark Chocolate Quinoa Crisps. Imagine a Rice Krispie Treat, but with chocolate. Lots of chocolate. From 8th and Lake.

4. Raw Fudge. Oh hell yeah. From @edgarraw on Instagram.

5. Vegan Neapolitan Mini Cheesecake. This recipe has lot of ingredients and even more prep steps. But we chose it because it’s one of the only vegan cheesecake recipes we found that doesn’t rely on tofu as the main ingredient. (Not that there’s anything wrong with that… unless you’re soy-free like us.) From Healthy Eating Jo.

6. Raw Chocolate Hazelnut Bliss Bites. This is a favorite technique of ours. You can make sweet little balls like this with any combination of nuts, cacao, coconut oil, and dates. We chose this recipe because of its simplicity, and well… chocolate. From Earthy Andy.

7. Cashew, Lemon & Coconut Bliss Balls. (Why does everyone put “bliss” in the name?) This is another variation on tasty balls. Kinda like a lemon bar. From Real Food Pledge.

BONUS:
