The Paleo diet offers an exciting approach to meal planning – but sometimes, it can be challenging to stick to. It’s likely that you’ve asked yourself if it’s possible to prepare a tasty, healthy breakfast in minutes. Lots of people have this problem – in fact, a recent study by The NPD Group found that 31 million Americans just skip breakfast, every day!
And that’s a shame, because breakfast really can be just as delicious as dinner, and we’ve got five easy paleo breakfast recipes that prove it.
There are almost as many paleo oatmeal recipes out there as there are regular oatmeals. That makes sense because there are a million ways to make a bowl of hot, gooey goodness. Some paleo oatmeals call for banana and coconut butter, while others combine almond milk with chia and sunflower seeds. Since they’re all paleo, they leave you feeling full and energized far longer than regular oatmeal, which is too carb-heavy to withstand a long day at work. Just because you go paleo, doesn’t mean you have to give up on your favorite breakfast treat. Paleo pancakes are a quick and easy hit that’s sure to please friends and family alike. While some people find substitutes like almond and coconut flour, I like keeping it simple: equal parts bananas and eggs and half a cup of almond butter is all it takes. Top with coconut oil, honey, and berries, and you’re giving maple syrup a run for its money!
Shake It Up
Shakes and smoothies are a great way to get essential fruits and vegetables in, and they’re incredibly refreshing. Plus, you can shake it up all sorts of ways when in need of variety. Taken all together, they’re a caveman’s preferred way to wake up. Substitute almond milk for dairy (or, just use water), and you’ve got a great base for your creation. Throw in a few handfuls of spinach, some frozen strawberries, chia seeds, and you’re off to a great day! If you’re looking for some extra protein, a spoonful of almond butter (or two) won’t hurt.
Potatoes aren’t recommended in high quantities for Paleo dieters – but sweet potatoes are, and they taste better anyway. Fill up a skillet with diced sweet potatoes, bacon, eggs, and veggies like zucchini, onion, and bell pepper, and say goodbye to the afternoon slump. If you need to motivate not only yourself but your kids, you’re going to have to be creative. Breakfast burgers are a great way to make mornings exciting. Instead of a bun, use a paleo substitute – use eggs (fried up like an omelet), or try Portobello mushrooms. Fresh spinach, avocado, tomatoes, bell peppers, and bacon round out the experience.
